Before the winter blues starts and after the gorgeous Indian summer that we’re having: let’s talk about energy. At the moment I find it hard to get up in the morning. The bed is so clingy and the duvet so heavy and overall it’s just warm and safe in the bed. If it weren’t for the jealous alarm clock that wants to separate me and my heaven of pillows, I probably wouldn’t get up. Maybe one of the reasons that I hate to face the day is that I don’t have any good breakfast to look forward to. All the healthy ice-cream breakfast is all eaten and I just don’t feel like making bircher muesli the day before, so I came up with something else to keep me healthy and full of energy: homemade cereal bars.
All you need is:
– 200 g mixed cereal
– 100 g rolled oats
– 100 g coconut
– a handful of dried cranberries
– 50 g butter
– 100 g honey
– juice of 1 lemon
Add all the dry ingredients in a bowel and mix well. Put the butter, honey and lemon juice in a pan and bring to the boil. Add the dry ingredients into the pan and stir well until it gets a light brown color. Now spread it on a baking tray (lined with baking paper) and let it rest for 15 mins. Cut the cereal into squares and voilá!
