It started to get really hot again and I caught a cold. It’s the worst. Have you ever tried drinking hot tea and dress reasonable on hot summer days?! I can’t recommend it. I’m hot and cold and eating something appropriate is a challenge. Luckily I remember this great flavor combination of juicy nectarines with creamy mozzarella together in a salad.

All you need is:
– salad mix
– a handful of cherry tomatoes
– half of a mozzarella (I used buffalo mozzarella)
– 2 nectarines
elderflower vinegar (or some apple vinegar)
– olive oil
– salt, pepper

Cut the tomatoes, mozzarella and nectarines into pieces. Mix the salad with all the other ingredients in bowl and serve right away.

For the purpose of this pictures I put two bowls on the photo. To be honest: I just ate the whole thing on my own. Not that I was the only one in the office but it just wasn’t enough food. Do I feel guilty? A little bit. Would I love to share if I had it again? Definitely not.
