I’m currently actually on a train home. It takes me more than 7 hours from my home to the place where I grew up. So while sitting here, watching the landscape passing by and summing “Driving home for Christmas”, I realized that I haven’t posted the best cookie recipe ever. You think I’m bragging?! Wait until you made these easy chocolate cookies yourself.

I got the recipe from my aunt who actually had to bake the recipe for television because they got selected as “best cookies”. Not joking. And those are (almost) the only Christmas cookies that I’m allowed to make. My mum has some over-decades-proofed-and-tested recipes that she makes every year. Very delicious, very beautiful. So no need for me to make those as well.

Back to the recipe: it’s really easy (can’t stress that enough) and fast to make and they almost taste like tiny little brownies.

All you need is:

250 g butter (handwarm)
150 g powdered sugar
220 g flour
50 g cocoa
5 egg yolks
1 tablespoon vanille sugar

For the finish:
marmalade, white chocolate

Mix the butter with the powdered sugar and cocoa. When smooth add the egg yolks and Vanille sugar, mix in the flour at last. Put it in the fridge for 1 h. Drink some tea, relax and spend some quality time. Then all you have to do is to form little balls (they will melt in the oven to the perfect form) and bake for 10 mins at 200 ° C.

After they are cool, stick them together with some dark marmalade and decorate with melted white chocolate.

I made some small snowflakes on the cookies. It’s certain now that there won’t be white Christmas where I am, so at least my cookies look like winter.

If you wonder what to do with all the egg whites that you certainly have left over, why not try the white chocolate poppy seed macaroons?

Let me present to you: the best (christmas) cookies!
