Can you believe that the asparagus season as almost over? I wait for a whole year and then with – what seems like – the blink of an eye they’re gone from my parents garden and the super market shelves. So I quickly bought what was left and made this rustic green asparagus bread salad for lunch.

Delicious spring bread salad with  asparagus, bacon and egg

All you need is:
– a handful of lamb’s lettuce
– 5 green asparagues
– 2 slices of dark bread
– a piece of cucumber
– 1 Tbsp of chopped bacon
– 2 eggs
– juice of 1 lemon
– 2 Tbsp olive oil
– salt & pepper

Cook the eggs in a pot of water for 7 mins. Meanwhile preheat a pot with water and cut the asparagus in pieces. Cook the stems first for 3 mins and then add the tips for another 2 mins. Put the bacon into a pan and roast it for 2 mins. Cut the bread into squares and add to the bacon. Take the cucumber and slice it. Once everything is cooked (and peeled), put the lamb’s lettuce into a bowl and add all the other ingredients. Add the lemon juice, olive oil and season with salt and pepper.

I read of the concept of bread salad before but I’ve never tried it (I always eat 2 slices of bread on the side). But I must say: this is delicious! It’s slightly warm as the eggs and asparagus come right out of the pot and the bacon and bread out of a pan.

Mmmmmh! Now looking at the pictures makes me want it again. Do you think I’ll find some more green asparagus?
