Are you into meat? A little bit? Then you might be just like me: I seldom eat it but when I look for high quality. So for this recipe I bought chicken of the highest standard – because also for a quick lunch you should make sure to eat good and healthy. There’s no point in making sure I eat my greens and neglecting the fact that the meat is low quality.

Quick (home) office lunch: roasted chicken with asian broad beans

All you need is:
– one chicken breast
– a handful of broad beans
– 2 garlic cloves
– 1 Tbsp soy sauce
– 1 Tbsp fish sauce
– 2 Tbsp of water
– salt, pepper
– 1 tsp chili flakes
– 2 Tbsp vegetable oil

Heat a pan and season the chicken. Roast it in 1 tablespoon of vegetable oil for about 12 mins (or until cooked through). Meanwhile cut the broad beans into pieces about 3 cm sizes. Cut the cloves into small slices.

Take the chicken breast out of the pan and add the rest of the vegetable oil. Add the garlic and broad beans. Season with soy sauce, fish sauce, water, pepper and chili flakes. Cook for 5 mins. Cut the chicken into slices and put the broad beans and chicken on a plate.

For this recipe I actually only wanted to make this broad beans. It’s recipe from my boyfriend and I love the taste so much. I added the chicken for some protein. (Eating balanced too! Yeah!)

Considering the fact that I don’t often eat meat (and therefore seldom cook it), this chicken turned out perfect: brown and crunchy on the outside and juicy on the inside. Soooo good!
