Last week I was really good at eating healthy at my (home) office. It’s also because I was inspired with the ingredients I bought and I had no other lunch plans. This week is a whole different story. I’m a little over-booked on meetings and eat a quick lunch in between (which means bread with some kind of spread – not even these ones) or on said meetings. Lunch meetings are great. But not very productive.
So this is a recipe I came up with last week (and I ate it three times, so it’s good): pasta with avocado sauce and pepper. Goes perfectly with the warmer weather and my lust for summer. It’s certainly not a recipe that wins with its look. I’m not going to say what the sauce reminded me off first. I had to add the colorful bell pepper to add some appetizing element to it. The taste makes up for it.
All you need is:
– 1 whole avocado
– juice of 1/2 lemon
– 1 Tbsp sour cream
– a pinch of salt
– a pinch of pepper
– half a bell pepper
– 2 handful of pasta
Cook the pasta until al dente. Meanwhile put the avocado, sour cream, lemon juice, salt and pepper into a blender and mix well. Cut the bell pepper into small pieces.
Sieve the pasta put into a bowl and add the avocado sauce. Sprinkle it with the bell pepper and voilá! A perfectly healthy lunch break recipe.
