Banana bread cake.

While I write this, I’m sitting again on a bed in a Parisian hotel. It’s hard to keep up with my posting schedule while gone on a business trip but once I commit to something I’m doing it. Pinky promise.

And of course I want to tell you more about that weekend that I was all alone. Such a treat (for a very short while after that it gets boring). The best thing about being alone all weekend is however that you can do what you want without having judging eyes on you all the time. Like when I don’t like to dress after a shower or dance to this song that I have in my head or make a mess and not clean it up or make banana bread for breakfast that’s so late that it’s more a lunch.

Mmmh, breakfast. I love breakfast – mostly sweet. Even if I have ham and an egg, I want my breakfast to start and finish with something sweet. So when I was alone and thought about what I can treat myself to for breakfast and I found this (rotting) banana, I thought I not let it go to waste but make banana bread. I researched a little online and thought: this is easy, I can come up with something myself and created a banana bread cake. The name comes from my boyfriend who said that it’s more like a cake than a banana bread. But what does he know?! I invented something (once again). Something the world has been waiting for and it will complete your life because there is not only banana in my bread but chocolate and almonds and buttermilk. All the good stuff that you need for breakfast. My mom would be proud. So responsible! And of course I wouldn’t tell her that there is a lot of oil and sugar in there as well. Just for her sake, so she can sleep well.

All you need is:

– 1/3 cup sugar
– 2 ripe banana (I only had one that wasn’t nearly enough)
– 1 egg
– 1/4 cup vegetable oil
– 1/4 cup buttermilk
– 1/2 cup flour
– 1/4 cup ground almonds
– 1 tsp baking soda
– pinch of salt

Add all ingredients in a bowl and bake in the 175°C preheated oven for 30 mins and it’s all done. As easy as delicious.

This nice baking form is from rice. I actually made the banana bread (instead of banana pancakes) because I finally wanted to use them. I bought them like a month ago and I’m smitten with the peonies print.
