You probably wonder what the title of this post means. It’s a play on words and once you’ve looked over the images and text you’ll see how unbelievable appropriate and considerate this pun is. Cheese. Fruit. Salad. It’s everything here.

You might be shocked that this weeks food posting is not a dessert or cake or something similar. It’s still a little sweet (don’t worry) but also sour and salty and perfect for the hot summer days that we still have. It’s actually almost everything I eat at the moment. Fruit in a salad with cheese. Does it get better than this?! Here are my 3 favourite salads for summer:

1. The peach rucola caprese salad

This salad is inspired by a work colleague who once made this and key are to choose the best ingredients possible (as to every meal).

All you need is:
– peach
– rucola
– mozzarrella di buffala
– tomatoes

As dressing I chose a simple balsamic vinegar, olive oil, pepper and salt vinaigrette.

2. The watermelon goat cheese salad

This combination got inspired by an instagram picture by Anna. I know the trick of adding a little salt to a watermelon to get some extra flavour (ever heard of that?) but I just never thought about putting it into a salad. All those years of missing out!

All you need is:
– mixed salad
– watermelon
feta cheese (or other goat cheese)

For the dressing I used passion fruit vinegar (if you don’t have this, you can just add some real passion fruit and white wine vinegar), olive oil, salt and pepper.

3. The bean apple blue cheese salad

This is my own invention if anything. Those are just 3 things that I like but them all together and tadaaaa!

All you need is:
– green beans (cooked)
– apple
– blue cheese

For the dressing:
– 1/2 tsp honey
– 1/2 tsp mustard
– 2 Tbsp white wine vinegar
– 2 Tbsp olive oil
– salt, pepper

Mix the dressing well and pour it over the ready made salad. I like to make it while the green beans are still hot and add the apple and blue cheese afterwards for a more intense flavour. What I also like is adding some walnuts.
